Gordo Grilled Lamb Chops

Grilled Lamb Chops

Serves 8 people



  • 1/3 Cup chopped parsley

  • ¼ Cup toasted pine nuts

  • 1 roughly chopped Garlic clove

  • 3 Tbsp. Cherry vinegar

  • ¼ Cup extra virgin olive oil

  • Salt to taste

  • Lamb chops

  • Salt to taste

  • Rosemary from the garden


Mix all the ingredients from the marinade in a bowl and set aside. Season the lamb chops with some salt and olive oil. Place them over a hot grill. While they’re cooking, add some rosemary (previously covered in some olive oil) on top of each lamb chop and cover the grill so that an aromatic smoke forms.


Open the grill and turn the chops to cook on the other side. When nice and cooked, remove from the grill and onto a plate. While they’re still hot, brush some of the marinade (with a rosemary brush from the garden) on top of them so that they absorb the flavor while they rest a bit. It’s important to let them rest to have some extremely juicy lamb chops. Add the rest of the marinade on top and enjoy this exquisite dish with a good glass of Gordo!
