Gambas Al Ajillo
Serves 4 people
Ingredients

1/3 Cup olive oil

3 Shaved garlic cloves

2 Tsp. Pimentón de la Vera or smoked paprika

1 Tsp. Chili flakes
-
1 Splash of cherry wine (or in this case, a splash of Totus Tuus)

20 Gambas or shrimp (raw and cleaned)

Fresh parsley
Preparation
Add a generous amount of olive oil to a pan. While it’s still cold, add shaved garlic so that it slowly infuses into the oil without burning. Then add some chili flakes, pimentón de la Vera and a splash of Totus Tuus. Add the gambas and season with salt. Turn so they cook on both sides and season with parsley. Careful not to overcook them! As soon as they turn pink, they’ll be tender and ready to eat. Enjoy with a glass of Totus Tuus, buen provecho!
